- 2 ripe avocados
- 1 Lime
- 1 small tomato
- 1 small red onion
- 1 Garlic clove
- 2 EL Olive oil
- Salt and pepper to taste
- Fresh herbs (e.g. coriander, parsley) to taste

Cut the avocados in half, remove the stone and scoop out the flesh with a spoon.

Place the avocado flesh in a bowl and mash with a fork.

Squeeze the lime and add the juice to the avocado.

Wash the tomato, remove the seeds and cut into small cubes.

Peel and finely chop the onion and garlic.

Add the diced tomato, onion and garlic to the avocado mixture.

Add the olive oil and mix well.

Season to taste with salt, pepper and fresh herbs.

Cover the dip and leave to stand in the fridge for about 30 minutes before serving with grilled vegetables or as a spread.
