preparation
Prepare the cashews: Finely grind the cashews in a blender or food processor until they have a flour-like consistency.
Add the apricots: Add the dried apricots to the ground cashews and continue to blend until a sticky mixture is formed.
Incorporate other ingredients: Add the rolled oats, almond butter, maple syrup, cinnamon and a pinch of salt to the mixture. Mix everything well until you have a smooth mixture. Optionally, hemp seeds or sunflower seeds can now be added.
Shape into balls: Form small balls from the mixture, about the size of a table tennis ball. If the mixture is too sticky, moisten your hands slightly or roll the balls in oat flakes.
Chill: Place the energy balls on a baking tray lined with baking paper and place in the fridge for at least 30 minutes to firm up.
