Alkaline tomato and bell pepper dip

Ingredients

  • 4 large tomatoes
  • 2 red peppers
  • 1 small onion
  • 2 Garlic cloves
  • 2 EL Olive oil
  • 1 EL Apple cider vinegar
  • 1 TL Maple syrup
  • Salt and pepper to taste
  • Fresh herbs (e.g. basil, oregano) to taste

Wash the tomatoes and peppers and cut into small pieces.

Peel and finely chop the onion and garlic.

Heat the olive oil in a pan and fry the onion and garlic until translucent.

Add the tomato and bell pepper pieces and simmer over a medium heat for about 10-15 minutes until the vegetables are soft.

Puree the mixture with a hand blender until you have a smooth sauce.

Add the apple cider vinegar and maple syrup and mix well.

Season to taste with salt, pepper and fresh herbs.

Allow the sauce to cool and serve with grilled vegetables or meat.
