Grilled sweet potatoes with avocado and herb dip

Ingredients

  • 2 large sweet potatoes
  • 2 EL Olive oil
  • Salt and pepper to taste
  • Fresh herbs (e.g. rosemary, thyme) to taste
  • 1 ripe avocado
  • 1 EL Lemon juice
  • 1 Garlic clove, finely chopped
  • 2 EL Olive oil
  • Salt and pepper to taste
  • Fresh herbs (e.g. coriander, parsley) to taste
  • 2 large sweet potatoes
  • 2 EL Olive oil
  • Salt and pepper to taste

  • 1 ripe avocado
  • 1 EL Lemon juice
  • 1 Garlic clove, finely chopped

Peel the sweet potatoes and cut into slices about 1 cm thick.

Brush the sweet potato slices with olive oil and season with salt and pepper.

Grill the sweet potatoes on the barbecue over a medium heat for about 10-12 minutes per side until they are soft and lightly browned.

For the avocado and herb dip, cut the avocado in half, remove the stone and mash the flesh with a fork.

Add the lemon juice, garlic, olive oil and fresh herbs to the avocado and mix well. Season to taste with salt and pepper.

Sprinkle the grilled sweet potatoes with fresh herbs and serve with the avocado and herb dip.
