Potato-vegetable fritters with salmon

  • 75 g smoked salmon
  • 2 medium potatoes
  • 100 g courgettes
  • 1 medium carrot
  • 1 small onion
  • 1 egg
  • 1 tsp flour
  • Salt
  • Pepper

Wash, peel and finely grate the potatoes, carrot and courgette and squeeze out any excess liquid. Peel and grate in the onion. Add the egg and flour and mix through. Season with salt and pepper to taste.

Divide the mixture into thirds and flatten each fritter onto the surface of a non-stick pan. Cook each side for 4–5 minutes over a medium heat.

Cut the salmon into strips and serve with the finished fritters.
