Lentil spread with mushrooms
Ingredients:
  • 300 g lettuce
  • 200 g white mushrooms
  • 1 avocado
  • 300 g cherry tomatoes
  • 1 apple
  • 1 tsp. sesame oil
  • 2 tbsp. sunflower seeds
Dressing:
  • ½ bunch parsley
  • juice of ½ lemon
  • 2 tbsp. apple juice
  • 1 tbsp. agave nectar
  • 4 tbsp. olive oil
  • salt
  • pepper

Wash and dry the lettuce. Slice the mushrooms. Pit, peel and slice the avocado. Wash the apple, remove the core and finely dice. For the dressing, mix the lemon juice, apple juice, agave nectar and oil in a large salad bowel and season with salt and pepper. Finely chop parsley and stir in. Heat the sesame oil in a pan, roast the sunflower seeds for approx. 2 minutes, then remove. Mix the lettuce, mushrooms, avocado, tomatoes and apple with dressing. Sprinkle the sunflower seeds over the top.
