preparation
Prepare the almonds: Finely grind the almonds in a blender or food processor until they have a flour-like consistency.
Add the dates: Add the pitted dates to the ground almonds and continue blending until a sticky mixture is formed.
Incorporate other ingredients: Add the shredded coconut, cocoa powder, coconut oil, vanilla extract and a pinch of salt to the mixture. Mix everything well until you have a smooth mixture. Optionally, chia seeds or linseed can now be added.
Shape into balls: Form small balls from the mixture, about the size of a table tennis ball. If the mixture is too sticky, moisten your hands slightly or roll the balls in grated coconut.
Chill: Place the energy balls on a baking tray lined with baking paper and place in the fridge for at least 30 minutes to firm up.
Serving suggestion:
The alkaline energy balls are a perfect snack between meals and provide quick energy. They can be stored in an airtight container in the fridge for up to a week.
